Pineapple fried rice is a popular dish in Thai cuisine and is often served in a hollowed-out pineapple for an attractive presentation.

Heat vegetable oil in a large pan or wok over medium heat.

Add chopped onion and minced garlic, sauté until fragrant.

Add frozen peas and carrots, stir-fry for 2 minutes.

Push the vegetables to one side of the pan and add the cooked rice to the other side.

Drizzle soy sauce over the rice and stir-fry for 3-4 minutes, breaking up any clumps.

Add curry powder, salt, and black pepper, mix well.

Add pineapple chunks and roasted cashews, stir-fry for another 2 minutes.

Remove from heat and let it rest for 5 minutes.
