  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add frozen peas and carrots, stir-fry for 2 minutes.
  4. Push the vegetables to one side of the pan and add the cooked rice to the other side.
  5. Drizzle soy sauce over the rice and stir-fry for 3-4 minutes, breaking up any clumps.
  6. Add curry powder, salt, and black pepper, mix well.
  7. Add pineapple chunks and roasted cashews, stir-fry for another 2 minutes.
  8. Remove from heat and let it rest for 5 minutes.
  9. Garnish with chopped scallions before serving.
