  3. Add garlic and ginger, sauté for 1 minute.
  4. Add carrots, peas, and scallions. Cook for 3-4 minutes until vegetables are tender.
  5. Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through.
  6. Add cooked quinoa, pineapple, soy sauce, salt, and pepper. Stir well to combine.
  7. Cook for an additional 2-3 minutes until heated through.
