Rinse the pigeon peas and soak them overnight.

Drain the soaked pigeon peas and rinse again.

In a large pot, add the pigeon peas, water, onion, garlic, ginger, turmeric powder, cumin powder, coriander powder, cayenne pepper, and salt.

Bring the pot to a boil and then reduce the heat to simmer for 20-25 minutes or until the pigeon peas are tender.

While the pigeon peas are cooking, peel and dice the mango.

Once the pigeon peas are cooked, add the diced mango, coconut milk, and lime juice to the pot.

Stir well and let it simmer for another 5 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot, garnished with fresh cilantro.
