  1. Preheat the oven to 325°F (163°C).
  2. In a large bowl, combine rolled oats, almonds, cashews, pumpkin seeds, sunflower seeds, coconut flakes, honey, coconut oil, vanilla extract, cinnamon, and salt. Mix well.
  3. Spread the mixture evenly on a baking sheet.
  4. Bake for 25-30 minutes, stirring halfway through, until golden brown.
  5. Remove from the oven and let it cool completely.
  6. Once cooled, break the granola into small clusters.
  7. Store in an airtight container for up to 2 weeks.
