Pecan Pate Collard Green Wraps
Collard greens are a great source of vitamin K, vitamin A, vitamin C, and fiber.

In a food processor, combine the pecans, garlic, lemon juice, nutritional yeast, tamari, salt, and black pepper. Process until smooth.

Wash and dry the collard green leaves. Cut off the stems and blanch the leaves in boiling water for 30 seconds. Remove and immediately transfer to an ice bath.

Slice the carrot, cucumber, avocado, and red bell pepper into thin strips.

Lay a collard green leaf flat on a cutting board. Spread a layer of the pecan pate on the leaf, leaving a border around the edges.

Place a few strips of carrot, cucumber, avocado, red bell pepper, basil leaves, and mint leaves on top of the pate.

Roll up the collard green leaf tightly, tucking in the sides as you go.

Repeat with the remaining ingredients.

Slice the wraps in half and serve chilled.
