Pears are one of the few fruits that do not ripen on the tree. They are picked when they are mature but still hard and then left to ripen off the tree.

  1. Preheat the oven to 375°F (190°C).
  2. Cut the pears in half and remove the core.
  3. In a small bowl, mix together the brown sugar and cinnamon.
  4. Place the pear halves in a baking dish, cut side up.
  5. Sprinkle the brown sugar mixture over the pears.
  6. Dot each pear half with a small piece of butter.
  7. Drizzle honey and vanilla extract over the pears.
  8. Squeeze lemon juice over the pears.
  9. Bake for 30 minutes, or until the pears are tender.
  10. Remove from the oven and let rest for 10 minutes.
  11. Serve the pears warm, garnished with almonds.
