In a large bowl, mix together the creamy peanut butter, honey, rolled oats, mini chocolate chips, and vanilla extract until well combined.

Place the mixture in the refrigerator for 30 minutes to chill.

Once chilled, remove from the refrigerator and shape the mixture into small balls, about 1 inch in diameter.

Roll the balls in shredded coconut and chopped peanuts to coat.

Place the coated balls on a baking sheet lined with parchment paper.

Refrigerate for at least 1 hour to set.
