  1. Boil the potatoes and chickpeas separately.
  2. Peel and mash the potatoes.
  3. Finely chop the onions and coriander leaves.
  4. Mix the mashed potatoes, boiled chickpeas, chopped onions, and coriander leaves together.
  5. Add salt and pani puri masala to taste.
  6. Make small holes in the puris and fill each puri with the potato-chickpea mixture.
  7. Serve pani puris with tamarind chutney and mint-coriander chutney.
  8. To prepare the pani, mix water, pani puri masala, and salt.
  9. Serve the pani separately and let each person fill their puris with the pani.
