The tradition of Halloween ghost cupcakes dates back to ancient Celtic festivals and the belief in spirits roaming the earth on Halloween night.

  1. Preheat the oven to 350°F (175°C) and line a mini cupcake pan with cupcake liners.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  3. In a separate bowl, mix together melted coconut oil, maple syrup, almond milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in the vegan chocolate chips.
  6. Spoon the batter into the cupcake liners, filling each about 2/3 full.
  7. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cupcakes cool completely.
  9. In a mixing bowl, beat the vegan cream cheese until smooth.
  10. Gradually add powdered sugar and continue to beat until well combined.
  11. Add vegan food coloring and mix until desired color is achieved.
  12. Transfer the frosting to a piping bag and pipe ghost shapes onto the cooled cupcakes.
  13. Allow the frosting to set for about 10 minutes.
  14. Serve and enjoy!
