Preheat the oven to 350°F (175°C).

In a large bowl, combine almond flour, coconut flour, ground cinnamon, and coconut sugar.

In a separate bowl, whisk together egg whites and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix well.

Melt coconut oil and honey together in a small saucepan over low heat.

Add the melted mixture to the bowl and mix until well combined.

Line a baking sheet with parchment paper.

Spread the mixture evenly on the baking sheet.

Bake for 15-20 minutes, or until golden brown.

Remove from the oven and let it cool completely.
