  1. Drain and press tofu to remove excess water. Cut into cubes.
  2. Cook rice noodles according to package instructions. Drain and set aside.
  3. In a wok or large pan, heat vegetable oil over medium heat. Add garlic and stir-fry until fragrant.
  4. Add tofu cubes and stir-fry until lightly browned.
  5. Push tofu to one side of the pan and add broccoli, carrot, and red bell pepper. Stir-fry until vegetables are tender-crisp.
  6. In a small bowl, whisk together soy sauce, dark soy sauce, brown sugar, and white pepper.
  7. Pour the sauce over the vegetables and tofu. Stir-fry for another minute.
  8. Add cooked rice noodles to the pan and toss to combine.
  9. Garnish with chopped green onions and serve with lime wedges.
