Peel and chop the carrots, onion, and garlic.

Heat olive oil in a pot over medium heat.

Add the chopped onion and garlic, sauté until fragrant.

Add the carrots and cook for 5 minutes.

Pour in the vegetable stock and bring to a boil.

Reduce the heat, cover the pot, and simmer for 20 minutes or until the carrots are tender.
