Preheat the oven to 350°F (175°C). In a large bowl, combine almond flour, tapioca flour, baking powder, and salt. Mix well. In a separate bowl, mix flaxseed meal and water. Let it sit for 5 minutes to thicken. Add coconut oil, maple syrup, apple cider vinegar, and chia seeds to the flaxseed mixture. Mix well. Gradually add the wet mixture to the dry ingredients. Stir until well combined. Add warm water as needed to achieve a smooth batter consistency. Pour the batter into a greased loaf pan. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes. Transfer the bread to a wire rack and let it cool completely before slicing. Enjoy!
