Heat olive oil in a large pot over medium heat. Add leeks and cook until softened, about 5 minutes.

Add potatoes, vegetable broth, salt, black pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.

Remove from heat and let cool slightly. Using an immersion blender, blend the soup until smooth.

Return the pot to low heat and stir in coconut milk and orange zest. Cook for 5 minutes, stirring occasionally.
