  1. Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.
  2. Add apple cider, vegetable stock, bay leaf, thyme, salt, and black pepper to the pot. Bring to a simmer and let it cook for 30 minutes.
  3. While the soup is simmering, preheat the broiler. Toast the bread slices until golden brown.
  4. Ladle the soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl. Sprinkle grated Gruyere cheese over the bread.
  5. Place the bowls under the broiler until the cheese is melted and bubbly.
  6. Remove from the broiler and let it rest for 5 minutes before serving.
