In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, and salt. Process until well combined, but not completely smooth.

Transfer the mixture to a bowl and stir in the flour. Let it rest for 10 minutes.

Shape the mixture into small kebab patties.

Heat vegetable oil in a pan over medium heat. Fry the kebabs until golden brown and crispy on both sides.

In a separate bowl, mix together Greek yogurt, lemon juice, garlic powder, salt, mint, and cilantro to make a dipping sauce.

Serve the falafel kebabs hot with the yogurt sauce.
