Okra Pilau
Okra, also known as lady’s finger, is a versatile vegetable that is commonly used in Indian and Middle Eastern cuisines. It is rich in dietary fiber, vitamins, and minerals, making it a nutritious addition to any meal.

Wash and trim the okra, then cut them into small pieces.

Rinse the basmati rice until the water runs clear.

Heat ghee in a pan and add cumin seeds. Let them splutter.

Add chopped onion, garlic, and ginger. Sauté until golden brown.

Add the spices (coriander powder, turmeric powder, red chili powder, and salt) and sauté for a minute.

Add okra and sauté for 2-3 minutes.

Add rice and mix well.

Add water and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes or until the rice is cooked.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with fresh cilantro and lemon juice.
