Okara is the pulp leftover from making soy milk, and it’s a great source of fiber and nutrients.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 65 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, combine the okara, almond flour, ground flaxseed, olive oil, and water. Process until well combined.
  3. Press the mixture into the bottom of a tart dish to form the crust.
  4. Bake the crust in the preheated oven for 10 minutes, then remove and set aside.
  5. In a blender, combine the tofu, soy milk, nutritional yeast, garlic powder, turmeric powder, salt, and black pepper. Blend until smooth and creamy.
  6. Stir in the spinach and cherry tomatoes.
  7. Pour the tofu mixture over the baked crust.
  8. Bake in the preheated oven for 30 minutes, or until the quiche is set and slightly golden on top.
  9. Remove from the oven and let it rest for 10 minutes.
  10. Serve warm and enjoy!
