  1. Rinse lentils under cold water.

  3. Add onion, garlic, carrots, and celery. Cook until vegetables are slightly softened.
  4. Add lentils, vegetable broth, tomato paste, bay leaves, cumin, paprika, salt, and black pepper. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.
  6. Remove bay leaves and stir in fresh parsley.
  7. Let the soup rest for 10 minutes before serving.
  8. Serve hot and enjoy!
