  1. In a pot, bring water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.
  2. In another pot, combine coconut milk, sugar, water, pandan leaves, and salt. Bring to a simmer over medium heat, stirring until the sugar is dissolved.
  3. In a small bowl, mix cornstarch with a little water to make a slurry. Slowly pour the slurry into the coconut milk mixture while stirring continuously. Cook for another 2-3 minutes until the mixture thickens.
  4. Remove the pandan leaves from the coconut milk mixture.
  5. Add the cooked rice noodles to the pot and stir to coat them evenly with the coconut milk mixture.
  6. Transfer the noodle candy to a greased square baking dish and let it cool for about 30 minutes.
  7. Once cooled, cut the noodle candy into small squares or desired shapes.
  8. Sprinkle roasted sesame seeds and crushed peanuts on top.
  9. Serve and enjoy!
