In a mixing bowl, combine rolled oats, peanut butter, maple syrup, cocoa powder, vanilla extract, and salt.

Stir until well combined.

Fold in chopped peanuts and mini chocolate chips.

Scoop the mixture onto a baking sheet lined with parchment paper.

Flatten each cookie slightly with the back of a spoon.

Place the baking sheet in the refrigerator and let the cookies rest for at least 1 hour.
