  1. Rinse the rice thoroughly and set aside.
  2. In a blender, combine the onion, red bell pepper, scotch bonnet pepper, garlic cloves, ginger, thyme, and a little water. Blend until smooth.
  3. Heat vegetable oil in a pot over medium heat. Add the blended mixture and sauté for a few minutes.
  4. Add the rinsed rice to the pot and stir well to coat the rice with the mixture.
  5. Pour in the water, add the bay leaves, crushed stock cube, and salt. Stir gently.
  6. Cover the pot and bring to a boil. Reduce the heat to low and let it simmer for about 20-25 minutes or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork before serving.
