Rinse the dried split peas and soak them in water for at least 4 hours or overnight.

In a large pot, add the soaked split peas, ham hock, chopped carrots, onion, celery stalks, bay leaves, thyme, salt, black pepper, and water.

Bring the mixture to a boil, then reduce the heat to low and simmer for about 2 hours, or until the peas are tender.

Remove the ham hock from the pot and shred the meat. Discard the bone and fat.

Return the shredded ham to the pot and cook for an additional 10 minutes.

Remove the bay leaves and thyme sprigs from the soup.
