My Mapo Tofu
Mapo tofu is a popular dish from Sichuan cuisine known for its spicy and numbing flavor.

Cut the tofu into cubes and set aside.

Heat vegetable oil in a wok or pan over medium heat.

Add Sichuan peppercorns, garlic, ginger, and scallions. Stir-fry for a minute.

Add ground pork and cook until browned.

Add Doubanjiang and stir-fry for another minute.

Add tofu cubes and gently stir to coat with the sauce.

In a separate bowl, mix cornstarch with water to make a slurry.

Pour the slurry into the wok and stir gently to thicken the sauce.

Season with soy sauce and salt.

Cook for another 2-3 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot with steamed rice.
