Cook farro according to package instructions.

In a large skillet, heat olive oil over medium heat. Add sliced leeks and sauté until tender.

Drain and rinse chickpeas, then add to the skillet with leeks. Cook for 5 minutes.

In a large bowl, combine cooked farro, leek and chickpea mixture, currants, baby spinach, sliced red onion, chopped parsley, lemon juice, olive oil, salt, and black pepper. Toss to combine.

Let the salad rest for 10 minutes to allow flavors to meld. Serve and enjoy!
