  1. Cook the brown rice according to package instructions. Set aside.
  2. Cut the tempeh into small cubes and sauté in a pan with vegetable oil until golden brown. Set aside.
  3. In the same pan, add sesame oil and sauté garlic, ginger, and scallions until fragrant.
  4. Add mushrooms, carrots, and peas to the pan and cook until vegetables are tender.
  5. Add cooked brown rice, pineapple, soy sauce, salt, and black pepper to the pan. Stir-fry for a few minutes until well combined.
  6. Finally, add the sautéed tempeh and mix everything together.
  7. Remove from heat and let it rest for 5 minutes before serving.
  8. Garnish with additional scallions if desired.
