  1. In a large bowl, combine the whole wheat flour, bread flour, rye flour, cornmeal, rolled oats, flaxseeds, sunflower seeds, pumpkin seeds, sesame seeds, and salt.
  2. In a separate bowl, mix the water and sourdough starter.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a sticky dough forms.
  4. Cover the bowl with a clean kitchen towel and let it rest for 30 minutes.
  5. After the rest time, fold the dough over itself a few times to incorporate air.
  6. Cover the bowl again and let it rest for another 30 minutes.
  7. Repeat the folding and resting process two more times, for a total of 4 folds and rests.
  8. After the final fold and rest, shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
  9. Cover the loaf with a clean kitchen towel and let it rise for 1-2 hours, or until it has doubled in size.
  10. Preheat the oven to 450°F (230°C).
  11. Score the top of the loaf with a sharp knife.
  12. Bake the bread for 40 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  13. Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
