  3. Add the curry powder, cumin, coriander, turmeric, and lentils to the pot. Stir well to coat the ingredients with the spices.
  4. Pour in the vegetable stock and bring to a boil. Reduce the heat and let it simmer for about 20 minutes or until the lentils are tender.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  6. Return the soup to the pot and stir in the coconut milk, lemon juice, salt, and black pepper. Cook for another 5 minutes.
  7. Serve the Mulligatawny Soup hot, garnished with fresh cilantro.
