Mujadara is a traditional Middle Eastern dish that dates back to ancient times and is believed to have been eaten by the prophet Muhammad.

  1. Rinse the lentils and rice separately.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the onions and cook until caramelized, stirring occasionally.
  4. Remove half of the caramelized onions and set aside for garnish.
  5. To the pot, add the lentils, rice, cumin, salt, and black pepper. Stir well.
  6. Add 4 cups of water and bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the lentils and rice are cooked.
  8. Remove from heat and let it rest for 10 minutes.
  9. Serve the mujadara topped with the reserved caramelized onions.
