  1. In a large skillet, heat vegetable oil over medium heat. Add tofu, mushrooms, carrots, cabbage, green onions, garlic, and ginger. Stir-fry for 5 minutes.
  2. In a small bowl, whisk together soy sauce, sesame oil, hoisin sauce, rice vinegar, cornstarch, salt, and black pepper. Pour the sauce over the vegetables and tofu. Stir-fry for an additional 2 minutes.
  3. Push the vegetables and tofu to one side of the skillet. Crack the eggs into the other side of the skillet and scramble them. Once cooked, mix the scrambled eggs with the vegetables and tofu.
  4. Warm the flour tortillas in a separate skillet or microwave.
  5. Place a spoonful of the vegetable and tofu mixture onto each tortilla. Roll up the tortillas tightly, tucking in the sides as you go.
  6. Serve the Mu Shu Veggie Wraps warm and enjoy!
