Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent.

Add the carrots, potatoes, red bell pepper, zucchini, and cauliflower florets to the pot. Cook for 5 minutes, stirring occasionally.

Stir in the tomato paste, ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and black pepper. Cook for 2 minutes.

Add the chickpeas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.

Remove the pot from heat and let it rest for 10 minutes.

Serve the Moroccan Vegetable Stew hot, garnished with fresh cilantro and parsley.
