Heat olive oil in a large pot over medium heat. Add onion and garlic, and cook until softened.

Add cumin, coriander, paprika, and cayenne pepper. Stir well to coat the onion and garlic.

Add canned tomatoes and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in lemon juice, salt, and black pepper.

Serve hot, garnished with fresh cilantro.
