  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the cut sides of the squash with olive oil and sprinkle with salt and pepper. Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender.
  3. While the squash is roasting, heat olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the ground cumin, ground coriander, ground cinnamon, paprika, cayenne pepper, salt, and black pepper to the skillet. Cook for 1-2 minutes, until fragrant.
  5. Stir in the chickpeas and diced tomatoes. Simmer for 10 minutes to allow the flavors to meld.
  6. Once the spaghetti squash is done roasting, use a fork to scrape the flesh into strands.
  7. Add the spaghetti squash strands to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes.
  8. Remove from heat and stir in fresh cilantro and lemon juice.
  9. Serve hot and enjoy!
