  3. Add chopped carrots, potatoes, and tomatoes to the pot. Stir to combine.
  4. Add fava beans and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the vegetables are tender.
  5. Stir in lemon juice, fresh cilantro, salt, and black pepper. Cook for an additional 5 minutes.
  6. Remove from heat and let the stew rest for 10 minutes before serving.
