Moroccan-Spiced Couscous
Couscous is a staple food in many North African countries, including Morocco. It is traditionally prepared by steaming coarse semolina, which is then served with various vegetables, meats, or sauces.
This is vegan recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 18.

In a saucepan, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the carrot, zucchini, and red bell pepper to the skillet. Cook for 5 minutes, or until the vegetables are tender.

Add the raisins, chickpeas, cumin, coriander, cinnamon, salt, and black pepper to the skillet. Stir to combine.

Fluff the couscous with a fork and add it to the skillet. Stir well to mix all the ingredients.

Cook for an additional 2-3 minutes, until heated through.

Remove from heat and stir in the fresh cilantro, mint, and lemon juice.
