  1. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, diced carrots, and sliced celery. Cook until vegetables are softened.
  2. Add ground cumin, ground coriander, ground turmeric, ground cinnamon, and ground ginger. Stir well to coat the vegetables.
  3. Add chickpeas, vegetable broth, crushed tomatoes, lemon juice, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use an immersion blender to partially blend the soup, leaving some chickpeas whole for texture.
  5. Serve hot, garnished with fresh cilantro.
