Quinoa is not actually a grain, but a seed. It is often referred to as a ‘superfood’ due to its high nutritional value.

  1. Cook the quinoa according to package instructions.
  2. In a food processor, combine the cooked quinoa, chickpeas, red bell pepper, onion, garlic cloves, ground cumin, ground coriander, paprika, salt, black pepper, fresh parsley, lemon juice, and olive oil. Pulse until well combined.
  3. Transfer the mixture to a bowl and stir in the egg and breadcrumbs.
  4. Shape the mixture into patties and refrigerate for 10 minutes.
  5. Heat olive oil in a frying pan over medium heat. Cook the quinoa cakes for 4-5 minutes on each side, until golden brown.
  6. Serve hot with your favorite dipping sauce or salad.
