Moroccan Chickpea Soup, also known as Harira, is a traditional Moroccan dish often served during Ramadan to break the fast. It is not only delicious but also packed with nutrients.

In a large pot, heat some olive oil over medium heat.

Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are tender.

Add the ground cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the vegetables.

Add the chickpeas, vegetable broth, and tomato paste. Bring to a boil.

Reduce heat and simmer for 20 minutes, allowing the flavors to meld together.

Remove from heat and let the soup rest for 5 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth.

Stir in the lemon juice, fresh cilantro, salt, and black pepper.
