Rinse the basmati rice under cold water until the water runs clear.

In a pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.

Add the rinsed rice to the pot and stir for a minute.

Add vegetable stock, salt, and black pepper. Bring to a boil.

Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and stir in the fresh herbs.
