Rinse the mung beans and soak them in water for 1 hour.

In a pot, heat vegetable oil over medium heat.

Sauté onion and garlic until fragrant.

Add tomato and cook until softened.

Drain the mung beans and add them to the pot.

Pour water into the pot and bring to a boil.

Reduce heat, cover, and simmer for 30 minutes or until the mung beans are tender.

Season with salt and ground black pepper.

Add spinach and cook until wilted.
