Modern Minestrone
Minestrone is a traditional Italian soup that dates back to ancient Roman times. It was originally made with whatever vegetables were in season and often included leftovers from previous meals.

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.

Add carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.

Add diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

Add cannellini beans and ditalini pasta. Cook for an additional 10 minutes or until pasta is tender.

Stir in fresh basil leaves, salt, and black pepper.

Remove from heat and let it rest for 5 minutes.
