Rice paper rolls originated in Vietnam and are commonly known as spring rolls.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Prepare the rice noodles according to package instructions. Drain and set aside.

Julienne the carrots, cabbage, bell peppers, and cucumber.

Dip one rice paper sheet in warm water until pliable, then place it on a clean surface.

Arrange a small amount of each vegetable, rice noodles, and fresh herbs in the center of the rice paper sheet.

Fold the sides of the rice paper over the filling, then roll it up tightly.

Repeat with the remaining ingredients.

Serve the autumn rolls with peanut sauce for dipping.
