Peel and slice the carrots.

Boil the carrots in salted water for 5 minutes.

Drain the carrots and set aside.

In a saute pan, heat olive oil over medium heat.

Add the carrots and saute for 3 minutes.

Add the pineapple, mint leaves, salt, and black pepper.

Cook for another 5 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes.
