In a medium saucepan, bring 1 cup of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.

Meanwhile, chop the dried apricots and mint leaves.

Fluff the couscous with a fork and transfer it to a large bowl.

Add the chopped apricots, mint leaves, lemon juice, olive oil, salt, and black pepper to the couscous. Mix well.

Let the couscous salad rest for 5 minutes to allow the flavors to combine.

Serve the minted apricot couscous salad as a main course or side dish. Optionally, garnish with almonds.
