Preheat the oven to 375°F (190°C). Grease a baking dish.

In a large bowl, combine the millet flour, cornmeal, baking powder, salt, and coconut sugar.

In a separate bowl, mix together the almond milk and coconut oil.

Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

If using, beat the egg and add it to the mixture.

Pour the batter into the greased baking dish and smooth the top.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
