Mild Coconut Tofu Curry
Coconut milk is commonly used in Asian and Indian cuisines to add a creamy texture and mild sweetness to curries.

Press tofu to remove excess water and cut into cubes.

Heat vegetable oil in a large pan over medium heat.

Add chopped onion, minced garlic, and grated ginger. Sauté until onion turns translucent.

Add curry powder, turmeric powder, and cayenne pepper. Cook for 1-2 minutes.

Pour in coconut milk and bring to a simmer.

Add tofu cubes and salt. Stir gently to combine.

Cover and simmer for 15-20 minutes, or until tofu is heated through.

Garnish with fresh cilantro.
