Chop the cucumber, tomato, red bell pepper, red onion, parsley, and mint.

In a large bowl, combine the chopped vegetables with the grilled/baked pita bread.

In a separate small bowl, whisk together lemon juice, olive oil, sumac, salt, and black pepper.

Pour the dressing over the salad and toss well to combine.
