Melitzanes Imam

Preheat the oven to 180°C (350°F).

Cut the eggplants in half lengthwise and score the flesh with a knife.

Sprinkle salt over the eggplants and leave them for 15 minutes to remove the bitterness.

Rinse the eggplants with water and pat them dry with a paper towel.

Heat 2 tablespoons of olive oil in a large pan over medium heat.

Add the onions and garlic to the pan and cook until softened.

Add the tomatoes, parsley, mint, salt, and pepper to the pan and cook for 10 minutes, until the tomatoes have softened.

Place the eggplants in a baking dish and fill them with the tomato mixture.

Drizzle the remaining olive oil over the eggplants.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, until the eggplants are tender and golden.

Let the dish rest for 10 minutes before serving.
