Masala Winter Squash
Winter squash is called ‘Kaddu’ in Hindi and is a popular vegetable in Indian cuisine.
This is vegan and gluten free recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Preheat the oven to 400°F (200°C). Cut the winter squash into small cubes.

In a mixing bowl, combine turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.

Add the winter squash cubes to the mixing bowl and toss until the cubes are coated with the spice mixture.

Place the coated squash cubes on a baking sheet and drizzle with oil. Roast in the preheated oven for 25-30 minutes or until the squash is tender.

While the squash is roasting, heat oil in a pan over medium heat. Add onions, garlic, and ginger. Sauté until the onions turn translucent.

Add chopped tomatoes and cook until they soften.

Once the squash is roasted, add it to the pan with the onion and tomato mixture. Stir well to combine.

Cook for another 5 minutes, stirring occasionally.

Garnish with fresh coriander leaves and drizzle with lemon juice.

Serve hot with rice or bread.
