  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
  3. Remove the stems from the portobello mushrooms and brush both sides with the marinade.
  4. Place the mushrooms on the grill and cook for 4-5 minutes on each side, or until tender.
  5. While the mushrooms are grilling, lightly toast the whole wheat bread slices.
  6. Spread Dijon mustard on one side of each bread slice.
  7. Layer the spinach leaves, grilled portobello mushrooms, tomato slices, avocado slices, and red onion slices on one slice of bread.
  8. Top with another slice of bread.
  9. Cut the sandwich in half and serve.
